We called this chocolate no bake cookie Haystacks at our house, but I’ve seen them called No Bake Cookies and 4 Minute Cookies. My sisters and I learned to make these when we were young and we made them very often. They are quicker and easier to make then chocolate chip cookies and perfect for when you need a serious chocolate fix like I had the other day. I usually have these ingredients on hand to be able to make them at the spur of the moment.
I do have to give a warning; we have found that these cookies don’t set up quite as well when the humidity it is high. Which is a bummer since a rainy day seems like a perfect time for this chocolatey treat. They still taste good, just on the gooey side.
Ingredients
- 3 Tablespoon natural unsweetened cocoa or dutched cocoa powder
- 1/2 cup (one stick) salted butter
- 1/2 cup milk
- 2 cups sugar
- 1/2 cup creamy or crunchy peanut butter
- 1 Tablespoon vanilla extract
- 3 cups rolled oats
Add cocoa, butter, milk, and sugar to a 3 quart pan, stir on medium heat. Get the peanut butter, vanilla, and oats ready to add later. Once butter is mostly melted, turn heat up to medium high and bring to a rolling boil and then cook for 1 minute. When minute is up, turn off the burner (leave the pan on burner), add the peanut butter and stir until fully incorporated. Take pan off the burner, add the vanilla and oats, stir well. Drop cookies by spoonful onto parchment or wax paper. Let set up and cool before enjoying.
